Trying to fit a yoga class and the other stuff of life into my evenings has been challenging at times on this 30 day journey. Especially when my work day runs long or I have a special occasion like a holiday party to prepare for. I found the recipe for these mini pumpkin pie croissants on a very cute and creative blog Shaken Together Life--definitely worth checking out. Tons of recipes and creative ideas. These were pretty quick and easy to throw together, only required a few ingredients and traveled well to my party. I preferred to add a little more sugar to the filling mix and the spice mixture than was called for, and I'd highly recommend a dollop of whipped cream or drizzle of icing on top. I already mentioned the vinyasa class I did, right? Don't judge me. ;)

Instructions:
- Unroll each crescent roll and slice in half lengthwise.
- Beat together the cream cheese, canned pumpkin, pumpkin pie spice and sugar until fluffy.
- Spread about 1 - 1 1/2 teaspoons of filling over each crescent roll.
- Roll up, starting with the wider end.
- Stir together the additional sugar and pumpkin pie spice.
- Roll each mini pumpkin pie croissant in the sugar/spice mixture and place on baking sheet.
- Bake at *375 for 13-15 minutes until lightly browned and baked through.
